I'm here today to share something amazing.

Marshmallow Caramel Coconut Ice Cream Squares.

Oh yeah.

Frozen treats are my jam. I like things cold. My drinking water, smoothies, ice creams, burritos, pizza. You name it, I'll probably eat it cold and prefer it that way. But the extent of my love for cold things stops with food. I don't like to be cold and I don't like cold weather. Which wasn't a worry today. The worry today came with the ice cream because I made these squares on one of the hottest days of the year so far.

Whoops.

No worries. No ice cream squares were harmed in the making of these photos. They all arrived safely back in the freezer and are ready to make someones day a little bit brighter.

I'd like to make your day a little brighter too, which is why I'm sharing this recipe. It's easy to whip up and freakin' tasty to snack on. Go grab your coconut milk and other fun ingredients. Make some squares. Share 'em with your friends. Or maybe don't do that and just eat them all yourself. I'll leave you here with the recipe to decide on that one.

MARSHMALLOW CARAMEL COCONUT ICE CREAM SQUARES

Makes 8

1 can full fat coconut milk
1 cup dates
1/4 cup water
1/2 cup marshmallows
3.5 oz chocolate bar

Pour coconut milk into large bowl. Set aside. Blend together dates and water until blended into a paste. Add date paste, and marshmallows to coconut milk and mix together. Pour into a parchment paper lined pan. The size of the pan will depend on how thick you want your squares. I used a 4x4 inch pan to make my squares thick. Freeze for 4+ hours. Remove from freezer and cut into squares. Melt chocolate bar and dip squares into chocolate. Place back on parchment paper and freeze for 30 minutes to set up completely. Serve, enjoy!
