Cookie Dough Footballs - Healthy Super Bowl Vegan Treat

Regardless of if you're into the Super Bowl or not, I think we can all benefit from some cookie dough footballs. I was feeling inspired today to create something festive/themed and at first I thought that maybe it's a little too late to be sharing a Super Bowl recipe when it's only one day away. But if you're last minute like me, then I've got you covered!

A lot of what I make and share here is very much what I am eating lately. If I'm sharing sugar filled cupcakes, that's what I'm eating. If I'm sharing raw vegan desserts, I'm into that. It's all really clearly shown here and I am very much on the health train lately. I'm just not feeling too many sugary sweets which is so strange to me because sweets are (were?) my jam. 

So today is all about the cookie dough footballs, but in a healthy way. There's no reason that you can't sit down to watch the game, halftime show, or commercials and eat healthy treats at the same time.

You can catch me tomorrow scavenging for a decent meal because I need groceries big time and eating my way through these cookie dough footballs. What do you plan to eat for the game?!

Ultimate Vegan S'mores Bars

Who doesn't love s'mores? The ultimate campfire snack coming to you in the form of bars. Think more chocolate with the soft sweetness of marshmallows all on top of a gooey graham cracker base.

YUM.

All of the s'more without the campfire because let's be real, we don't always have access to a campfire and I'm not about to roast a marshmallow on the stovetop because it's just not the same! 

Which is why these bars are perfect; all of the s'mores cravings satisfied without having to try to mimic the campfire experience.

Snickerdoodle Cookies

Once upon a time I fell in love with snickerdoodle ice cream.

Before that love affair I felt quite neutral about snickerdoodle cookies. But that ice cream, it changed everything.

This deep love for snickerdoodle ice cream continued for well over a year, maybe close to two years. It's probably one of my longest running food obsessions to date. 

These cookies are just an extension of that love; a way to simply get more snickerdoodle action in my life.

They're perfect for the upcoming holiday season too. You can just throw these in a container and take them to any family gathering. No worries about messing them up and easy for friends and family to just grab one and go. Convenience, comfort, and a little bit of that snickerdoodle sugar crunch.

BBQ Cauliflower Wings

Cauliflower is so versatile, I'm obsessed. We can turn it into pizza crusts, smoothies, rice, mashed potatoes, and wings. 

Talk about a magical vegetable.

Today we're making wings with it. They're crunchy on the outside and soft on the inside. Coated with bread crumbs and seasonings, then topped with bbq sauce and dipped in your favorite sauce. Oh YEAH. I love it.

I paired these ones with hummus but a vegan ranch dressing is also a fun one to use too!

Cinnamon Apple Crisp

Remember the apples I bought and talked about forever in this post? Well I still have some of them hanging around and their time of crisp beauty is coming to an end. The warm temperatures around here are also departing leaving me with some apples on the verge of going bad and some thick socks that can't combat the cold enough to help me regain feeling in my feet again.

Enough about all of that though. You're not here to listen to me complain about the fact that I'll be hibernating until April. Nope! You're here for some cinnamon apple crisp and that is very exciting on it's own!

I love making apple crisp because it's so easy to make. You don't need a lot of time, ingredients, baking talent, or effort to make it delicious. My kind of dessert. Let's get to baking so that we can curl up with a fuzzy blanket, a good book, and a warm bowl of fresh baked apple crisp!

6 Ingredient Pumpkin Alfredo - Vegan

I am so into sauces that I can whip up in no time at all. Hardly any prepping, no big mess, delicious with a capital D, and at this time of year - fall festive AF.

When I'm able to make sauces on my own it saves me time and money. Two things almost as precious as the excitement experienced by dogs when their humans get home.

I love it. And dogs. But that's another story for another time.

That's how I knew that I had to make something fitting with pumpkin. It wouldn't be fall/Halloween/Thanksgiving without it!

Six ingredients, not counting the noodles, is all that it takes to have a fresh warm batch of this creamy fall alfredo in your hands.

Best of Both Worlds Banana Bread

This banana bread is for everyone. Chocolate fans, vanilla lovers, and those who can't decide between the two (hey, that's me!) - we can all enjoy this one.

I make a lot of chocolate recipes on here and that probably won't be changing anytime soon. Chocolate is my JAM. But ya know what, I love vanilla too. If I'm going for ice cream and I have to pick between chocolate and vanilla ice cream, I'm going for vanilla hands down. I have a piece of chocolate basically everyday though. I really would rather not have to decide between two good things. So when I was making this banana bread I realized that one less chocolate vs. vanilla decision was needed on that day and the Best of Both Worlds Banana Bread was born. YUM.

I heard somewhere, and I can't remember where this came from, that life is all about seeing how much you can get away with. After hearing that I have been living by it. You think after hearing something that had a big impact on me that I'd remember where it came from, but NOPE. No idea. 
Anyways, I've been living by that statement now and life has gotten so much more fun and exciting! I do things that I wouldn't have done before, and not in a way that harms myself or others. Just in a fun, bold way. It's made me not want to make so many decisions that I thought I had to make prior to this. Cake or ice cream; why not both? Bike ride or running; a little of each works. Vanilla or chocolate; equal amounts of both. We spend so much time thinking that we can only do things or have things be a certain way because that's how they are. But that's not the case a lot of the time. We can do things that don't even cross our minds because they're not in our routines or they're not things that we often see being done by others. That doesn't mean they're wrong to do or that we can't do them. In fact, that probably means that we should do them!

So today we're doing that with some banana bread. Starting out small just to get us prepared for the bigger things. We gotta start somewhere and if that somewhere involved chocolate, vanilla, and bread then I think it's a great place to start.
