What I Ate Wednesday - Vegan + Gluten Free

I can so easily get lost in the Youtube world of What I Ate videos. There's just something about them that pulls me in. That probably sounds strange, but if you're here reading this then I bet that you understand!

This is just a quick post of what I ate today. It's all vegan, gluten free, and pretty freakin' delicious so I thought that it would be fun to share!

BREAKFAST

Banana date ice cream is my jam. It's probably my favorite combo and I haven't had fresh dates in a while so I've been missing it from my life. I didn't realize how much I really did miss it until I bought some on Sunday and have been eating them every day since. Usually in this form! I topped my ice cream with a little bit of a Larabar and cacao nibs. YUM.

SNACK

Typically... another Larabar. I'm hooked.

LUNCH

I made rice, corn, edamame, and roasted chickpeas. I mixed that all together with some bbq sauce and then added romaine and sriracha to really top it all off. This combo was amazing!

SNACK

Half of a mini watermelon in the sunshine before my bike ride. Nothing better!

DINNER

I made waffles for dinner because sweet things are where it's at. I topped my waffles with blueberries, maple syrup, and white chocolate peanut butter. The waffle recipe is right here! Try this combo out, you won't regret it!


That's it! Another day in the books. If you like these posts let me know! I think the next one I do will be a macro/calorie version. I don't count calories or macros regularly but I find it fun to do on occasion just as an experiment.

While looking at these type of posts it's important to realize this and never compare your own dietary choices to mine or anyone else's. Eat what makes you feel good and eat as much as you need to satisfy your body!
