Simple Oatmeal Breakfast Cookies

There was a time in my life when I didn't eat breakfast. That phase of my life went on for years. I still can't believe it. Life without breakfast. How did I survive?! I'm not sure. Some nights I even go to bed early so that breakfast will come faster. Everyone does that, right?!

Obviously I'm in the process of making up for all of those lost bowls of oatmeals and epic green smoothies that each morning brings.

In the winter I love starting off my mornings with a big bowl of oatmeal. So warm and hearty on the chilly mornings. But some days time doesn't always allow for me to make awesome bowls of oatmeal and these cookies are the next best thing! You can make these the evening before your busy day and grab them and go. Or you can even have these as a quick pick me up throughout the day. Whenever and wherever you choose to eat these little guys isn't what matters. What matters is that you are eating them in the first place because they're two (maybe 3) simple ingredients that you will want to put into your body. Aw yeah.

Simple Oatmeal Breakfast Cookies

makes 16 medium sized cookies

4 ripe bananas
2 cup oats
1/2 cup cacao nibs/chocolate chips

Preheat oven to 350 degrees. Mix together all ingredients and scoop cookies onto baking sheet. Bake for 10 minutes. Remove from oven. Serve, enjoy!

Store in airtight container for up to 7 days.
