Stuffed Sweet Potatoes

Need an easy Thanksgiving recipe? Here it is. Holiday baking can be stressful and time consuming. Not with this recipe though! After the baking of the sweet potato these take only about 10 minutes to put together. Spend all of that extra time making delicious desserts ;)

My dad came home with a bunch of sweet potatoes for me the other day. He got them for 29 cents a pound... what?! They're really good too. Or maybe they just taste better since they were a good deal. Either way works for me! And obviously this called for a sweet potato party.

Stuffed Sweet Potatoes

makes 4 sweet potatoes

4 large sweet potatoes
1 cup millet
1 cup spinach
1/2 cup sliced mushrooms
1/4 cup diced onions
2 tablespoon crushed almonds
1 tablespoon basil
3 cloves garlic
Tahini

Preheat oven to 450 degrees and bake sweet potatoes for 45-60 minutes. While baking prepare the stuffing. Cook millet, set aside. Saute spinach, mushrooms, onions, and basil. Once cooked, combine with millet; adding almonds and stirring until mixed together. After potatoes are cooked, remove from oven, and slice potatoes horizontally. Fill with millet mix and top with tahini. Serve, enjoy!
