Chocolate fudge cupcakes.
I’ve made this recipe a few times now and you’d think that after falling passionately in love with these cupcakes each time I had the pleasure of putting one in my mouth that I’d get tired of them.
Nope. Never happened.
Can you blame me though?
Recipe testing sure is a hard job. But ya know, someone has to do it.
A rich fudge cupcake with decadent peanut butter icing. Easy enough for us all to make. No complicated steps or ingredients. Gluten free and vegan. DANG. You really can’t ask for much more than that.
CHOCOLATE FUDGE CUPCAKES
makes 12 cupcakes
2/3 cup sugar
1/4 cup vegan butter
1/4 cup coconut oil
1/2 teaspoon vanilla
3 flax eggs (6 tablespoons water, 3 tablespoons ground flax)
1 cup gluten free all purpose flour
1/2 cup cacao powder
1/2 cup coffee
Preheat oven to 350 degrees. With a mixer, mix together sugar, butter, coconut oil, and vanilla. Add the flax eggs and mix together. Stir in flour and cacao powder alternating with the coffee. Add batter to lined muffin pan. Bake for 20-25 minutes. Remove and let cool.
2 cup powdered sugar
1/4 cup coffee
1/4 cup powdered peanut butter
1 1/2 tablespoon vegan butter
Add all ingredients to mixer. Mix together.
Once cupcakes are cool, spread icing evenly on cupcakes. Serve, enjoy!
