This has been my project of the weekend. I woke up this morning feeling like I was getting a cold. I ate a lot of greens and ginger, then I had one of these. I’m feeling better now and I would like to credit the ice cream for healing me.
I really like this ice cream recipe for a few reasons. The main reason is because it’s so easy and only consists of 5 ingredients. You literally just blend them all up and freeze the mixture for a bit. That’s it! It’s so easy that anyone can do it, I promise!
I made this ice cream in honor of Valentine’s Day. I recommend making these ice cream cones and eating them with someone special while watching House Hunters on HGTV for 6 hours like I end up doing somehow. I’m not even hunting for a house currently and I get so into that show. Actually, when I was younger I used to be really into architecture and interior decorating. I can probably thank many hours of playing Sims for that, to be honest. (Man, I miss that game so much) But really! I used to draw up floor plans for houses all of the time and browse real estate websites for no reason other than having fun doing so. Ah, the good ol’ days!
Wow. I’m not sure how I’ve reached the point of talking about all of that nonsense on this love(ly) Valentine’s Day recipe, but here we are.
Well actually, here we go. We’re going straight to the recipe so we can all make these ice cream cones and heal our colds or binge watch HGTV together. Let’s go!
Strawberry Ice Cream
makes 4 ice cream cones
4 cup frozen strawberries
2 cup cashews, soaked at least 4 hours/preferably overnight
2 tablespoon coconut sugar
Juice from 1 lemon
Ice cream cones of choice (make sure to get gluten free if needed!)
Blend together strawberries, cashews, coconut sugar, and lemon juice in high speed blender until smooth. Pour into a deep bowl lined with parchment paper. Place in freezer for 6-8 hours. Remove from freezer and let sit to thaw for 15-20 minutes. With an ice cream scoop, scoop out ice cream and stack on top of cones. Serve immediately, enjoy!
