I have been wanting to attempt a raw vegan donut hole recipe for a while now but never actually went through with it until this week. Usually whenever I create recipes I research the thing that I want to make, write down a rough idea of what ingredients and measurements I want to use, and then I test it however many times it takes for me to feel like the recipe is up to posting standards. On some occasions I get a recipe on the first try (but retest to make sure it didn’t happen by accident) and feel like I’ve just won a Nobel Prize or something whenever that happens. Exciting! But other times I test and test for the longest time without success. I think that I avoided donut holes for so long is because I saw them as an impossible task or one that I’d have to work out for a while to make happen. I added them into my November recipe schedule though and realized that making these little guys is not so hard after all! There’s only 7 ingredients that you’ll need to whip (well, blend) together and if you’re like me then you’ll most likely have all of the ingredients right inside your cabinets.
This recipe was really good for me to work on this week after everything that I’ve shared. I had a lot of fun making it and even though I didn’t take that long of a break I was so happy to get back into the swing of things. I spent some of my morning writing up a post for my future website changes and now I’m writing this. It all feels right, this is what I am meant to be doing.
Vanilla Almond Donut Holes
makes approx. 6 donut holes
1 cup oats
1/4 cup shredded coconut
1 tablespoon coconut sugar
1/4 cup dates
1 tablespoon + 1 teaspoon water
Blend together oats, coconut, and coconut sugar until ingredients break down into a flour. Add in dates and water. Pulse until ingredients start to blend and stick together. Roll into medium sized donut holes. Roll in coconut sugar or sprinkle some on top of donut holes. Serve, enjoy!
I also added in some pomegranate seeds for some extra crunch. Those are optional and could easily be replaced with anything you’re interested in. Chocolate chips would be a great alternative!
