Brownie Batter Cake Pops – Raw Vegan

I am such a fan of anything chocolate. Especially raw desserts like this. I seriously have to force myself to stop eating so that I can actually have enough of something to take a picture of. That’s what happened with these. I wanted to top them with pistachios but I didn’t have any so I had to wait. These sat in my fridge for two days without me touching them until I got the pistachios. Do you know how hard it was for me to not eat them in that time?! Probably not, but once you make this recipe you’ll totally understand.

I was walking with Darrin and Roxy tonight and I was trying to think of what to say in this post. I wasn’t sure where to go with it so I’m just going to tell you about my dinner experience.
I’ve been wanting pancakes for a few days now and Darrin and I finally made them tonight. We decided to try a new recipe and followed it perfectly. Actually it called for a lot of baking powder. I put less in than it said and that was even too much. These pancakes did not turn out well. At all. But being myself I just ate them anyways and Darrin ate some of them too.

I ate way too much baking powder tonight. I don’t think I ate enough to be harmful to me, but wow I’m not feeling the best currently because of it. Whoops. Two lessons were learned tonight that I’d like to share. Number one: beware of the baking powder content in recipes you find on the internet. Number two: just stick with making and eating massive amounts of brownie batter cake pops instead.

Brownie Cake Pops

makes 12

3 cups dates
1/2 cup almonds
1/2 cup buckwheat
1/2 cup cacao powder
2 tablespoon almond milk
Pistachios, crushed
Cacao nibs
Lollipop sticks

Blend together dates, almonds, buckwheat, cacao powder, and almond milk. Roll into medium sized balls and roll in pistachios and/or cacao nibs. Place lollipop sticks in the center of the balls. Serve, enjoy!
