Heeey everyone. How’s it going?! Coming at you today with a short recipe post! I know, it’s about time. I need to get my butt back in the kitchen more so that I’m able to share more things with you all. I have some ideas in mind, so I’ll see what I can do for the rest of this week. Who’s excited?! I know that I am and I hope you are too. Foods a great thing to get excited about. It’s fuel for our minds and bodies so it’s pretty crucial and a great thing to be happy about.
I’ve been eating a lot of raw foods lately and loving it. Today I had watermelon, bananas, and this dish. Pure, simple foods are what I’ve been diggin’ lately. So simple and so delicious! I came up with this the other night. I didn’t write anything down or have a photo shoot for it like I usually do. I just went with it and tossed some things together. I got some awesome results so I wanted to share anyways! Here we go
Zucchini Carrot Noodles & Cheezy Mango Sauce
serves 1
1 medium zucchini
1 large carrot
1/2 mango
3 medjool dates
1/4 cup water
Nutritional yeast
With a spiral slicer, slice zucchini and carrot. Place in bowl. Set aside. Blend mango, dates, and water together in blender. Pour over zoodles and top with nutritional yeast. Serve, enjoy!!

How do you know what veggies are ok to eat raw and which have to be cooked? I know for example with Shiitake mushrooms you can get that Shiitake Dermatitis.Thanks for posting, as always.

Hi there!I believe that almost all veggies are okay to eat raw. Eggplant has to be cooked and I believe that it’s recommended to eat potatoes cooked too. Other than that (and mushrooms) I think everything else is okay to eat raw! But a quick Google search can always help you out if you’re curious about a certain veggie.

I have no idea what medjool dates are and I have never liked dates. Is there any substitute?

Hi there!The dates just make it sweeter. You could make it without them or add in a couple of teaspoons of coconut sugar.

Oh good! Thank you. My mother used to make date cake when I was a kid and I hated it. But I like figs a lot, they might do, or even other fruits maybe. Thanks again. I was born a meat eater and never thought I would give it up but menopause took away my ability to digest foods at warp speed like I used to be able to do and red meat is about the worst; I find it so much easier to digest fruits and vegetables, so I am exploring all things vegetarian.

You could try any other fruit that you like and I’m sure it would work great! I was a meat eater too and never imagined that I’d be vegan. I guess we can expect the unexpected though 🙂 Best of luck to you!!
