Campfire Sandwich

Campfire food is the best summer food… Well besides ice cream. 😉

Each summer we have campfires in our backyard at least 2 or 3 times a week. Have to take full advantage of the nice summer nights while we can! But each year I try to get more and more creative with my foods. Plain old pizza mountain pies can get pretty boring pretty quick!
But anyways, I always love creating new combinations of things to cook over a fire. So tonight I came up with this peanut butter and chicken sandwich.

This is so simple, you won’t believe how good it is until you try it.

Peanut Butter and Chicken Sandwich

2 pieces of sesame seed Ezekiel Bread
peanut butter
1 tablespoon chia seeds
crushed almonds
grilled chicken
a campfire
a mountain pie iron

Spread the peanut butter on both pieces of bread. Sprinkle chia seeds, almonds, and chicken on top. Place in mountain pie iron and cook until your bread is crispy.

Put it onto a paper plate and enjoy! Simple clean up and delicious sandwich, easy for those busy summer nights!
