Yes, you read that correctly. Healthy chicken alfredo.
As many of you know by now, I’m all about quick and easy meals. Especially in the summer whenever the weather is so nice. I want to make something quick and get back to enjoying the outdoors. It’s currently 77 degrees at 10 in the morning. Loving it!
Anyways, I’m a big chicken fan. The only meat that I eat is chicken and turkey. So I try to be as creative with it as possible so that I don’t get tired of it. (Honestly don’t think that will ever happen no matter what.) That’s when I came up with this chicken alfredo, the healthy way! I got the alfredo idea from Chocolate Covered Katie. She’s fantastic! I only hope to someday be as creative as she is. I’m working on it. 😉
Healthy Chicken Alfredo
1 1/2 cups cauliflower
1/2 teaspoon garlic powder
1/2 teaspoon salt
2 tablespoon butter of choice (I used Earth Balance)
1 cup milk of choice (I used soy milk)
1/8 cup crushed almonds
5-6 pieces of chicken
Put the cauliflower, garlic powder, salt, butter, and milk into a pot and bring to a boil. Cover the pot and let simmer for 20 minutes. Blend mixture together with blender or food processor. I used a Ninja blender. Once blended completely set the mixture aside.
Next prepare the chicken. I used a George Foreman grill to grill my chicken. You can prepare your chicken any way that you’d like to though. Grill, bake, boil, whatever! The recipe works best for 5 or 6 pieces of chicken. But that all depends on the size of your chicken of course. While your chicken is cooking, you can prepare your mushrooms. I just place mine on the grill with the chicken and cook them at the same time. Multitasking at it’s finest! 😉
After your chicken and mushrooms are done it’s time to put together your masterpiece.
Chicken, mushrooms, alfredo, and then add your almonds on top of that. Delicious and indulgent without the excess amounts of cheese like in a traditional alfredo sauce. You can make this a vegan option too by replacing the chicken with some tofu. Just as delicious!
The great thing about this alfredo sauce is that you can make this ahead of time and keep it in the fridge until your ready to use. Or even save some of it for leftovers on your busy weeknights.
